1 slice goat cheese (feta type)
1 fresh grape leaf, big enough to cover the cheese
Some crushed red pepper and thyme
Olive Oil


This melted goat cheese is one of the classics of breakfast in the island, and if gives the same performance beside a glass of wine. It is so delicious that you cannot resist to have a second one...

After heating a little bit of olive oil in a anti-adhesive pan, put in it the slice of cheese that you have covered with flour and then wrapped into the grape leaf. After having fried if like red, add crushed red pepper and thyme and close the heater.
Bring it to the table and eat hot... enjoy...













 




1 Kg crushed olives
1 block Izmir tulum cheese
1 tsp cumin
1 tsp coriander
1 tsp mustard
1 tsp black pepper
1 tsp allspice
fresh wild herbs
1 glass crushed walnut
3 cloves garlic
olive oil

Extract the kernels from the crushed olives. Cut the Tulum cheese in parts as big as the olives. Mix the herbs. Seasıb with spices. Wait in a lot of olive oil and serve. If you want you can make a pickle of it. You may use big crushed olives. You may also stuff the olives with the walnut parts.









 




2 pieces Calamar
One part goat cheese
One part tulum cheese
One part cheddar type cheese
Fresh green spices, white wine

Cut the cheesed in tiny parts. Stuff the calamar. Put a little bit of oil in an anti-adhesive pan. Cook until water is gone and calamar is fried golden. Before taking from the pan to the plate, season with fresh corriander, sauge, thyme, rosemary, lemon zest, a little bir of sugar. Cook with a little bit of wine and take on a plate. Yes you heard right. We fry the okra you know. You can find this recipe in various places in Egean region. The recipe is very easy. You just have to take care, while purchasing okra, to choose the thin and long ones.

Heat olive oil in a pan. Leave the okra in the oil in the pan. When fried, take to a plate and serve with hot garlic yoghurt.

Rock Samphire is a herb that can be found along the shore in our island. Its leaves are just like cactus and contain water. It is a perfect ingredient for a raki meze.

Boil the samphire after cleaning it very well with water. Don't use salt, this herb is already very salty. After boiling it 5 minutes, put it in a jar with garlic, basil, olive oil, complete the level with cooking water and close the jar tightly You can eat some whenever you like to. 1 kg milk
1/2 kg sugar
9 spoon flour
5 parts mastic
Half a packet margarin


It is one of the two only foods in which we use margarin. The other one is our chocolate cake with cassis and apricot sauce. This is the only way to get good results with desserts. But it is acceptable considering the delicious results...

Melt the margarin and cook the flour. Add milk, sugar and mastic. Cook on low fire within mixing constantly until thickening, then pour in a tray Cut it in square parts and serve it with a red fruit coulis
